Chablis’ vineyards stretch out across 19 villages along the Serein valley.
Chablis, the ‘Golden Gateway to Burgundy’ devotes itself to producing a crystalline, perfumed, lively and sophisticated wine, whose name has become almost synonymous with ‘fine dry white wine’ outside France.

The producers we have selected provide us with high-quality musts, which we vinify in our cellars in Nuits-Saint-Georges.   They benefit from the same technical means and the same attention as our Côte d’Or wines.
The wine is then matured on its fine lees for 10 to 12 months, enabling it to acquire a certain suppleness and to make the aromas more complex.

Our Tasting Notes:

A brilliant pale yellow colour. The elegant nose has fruity scents.  The attack is frank and bold. This balanced wine has the same array of mineral and citrus fruit aromas on the palate as on the nose.  The finish has good length.
This Chablis, full of flavour, is a great pleasure to taste.

Suggestions

Serve at: 10°C to 12 °C
Serve with: Fish Terrine, Cheeses (Epoisses ou Chaource)
Cellaring Potential: 4 to 6 years

The Chablis "Vaillons" 2008 is pale yellow with green tints. Its pleasant nose opens up with notes of white flowers, citrus fruits and yellow fruits. It proves to be beautifully balanced on the palate. After a frank and supple attack, it is very aromatic. The fatness is accompanied by a beautiful sense of  tension, right through to the long finish.

There is a beautiful brilliant pale yellow colour with shades of green for this Premier Cru "Vaillons". The floral and fruity nose lets off soft aromas of hawthorn, orange peel, pears and fresh hazelnuts. This wine is voluminous on the palate and contains an almost chalky minerality. This Chablis has beautiful aromas.

The mineral nose, which is accompanied by a few fruity notes, is typical of the Chablis appellation. The orange, lemon, dried fruits and flinty notes are taken up again on the palate where there are also softer vanilla hints. This Chablis "Vaumuriens" 2006 rounds off on a full and persistent finish.
