The hand-picked harvest is vinified by producers we are in partnership with.  Our Oenologist tastes each cuvée and only chooses the best wines from trusted producers.
The wine is then matured in oak barrels for 14 to 16 months, in nineteenth century vaulted cellars which provide ideal conditions for raising wines. The proportion of new oak, which is susceptible to variations according to the vintage, represents on average one third of the cuvée. The barrels come from high-quality barrel makers and have been rigorously selected for their fine grain and light toast.

Our Tasting Notes:

A beautiful intense red.  We can distinguish aromas of red fruits and a few woody notes on the nose. The wine then reveals itself on the palate: spicy and fruity, with delicate smoky and toasty tastes which give it complexity
This is a well-structured wine, which has fine volume accompanied by a certain roundness.

The 2007 vintage gives us a Volnay "Santenots" which is a superb,  very dark red colour with black tints almost. The already open nose is powerful and very pleasant with fruity, spicy, slightly floral, menthol notes.  This wine is powerful and concentrated on the palate with a fruity vanilla finish of great length.

This Volnay "Santenots"'s nose is already open and very exuberant. It's a mixture of morello cherries, blueberries and peppered hot spices. This wine is round and smooth on the palate with fine density. Its sweetness counterbalances the blended tannins and the finish is sophisticated, leaving us with pepper and liquorice notes. A very fine wine.
